The Story Of This Chocolate

One memorable morning in Uji, just south of Kyoto, I was simply blown away in a tasting of their much celebrated Kotobuki Matcha.

This is super luxurous ceremonial grade drinking matcha and the growers could not believe I planned to add it to chocolate. I knew at once its vibrant, pure flavour would make the most extraordinary bar.

Here it is, perfectly balanced with natural cocoa butter, raw cane sugar and milk. The aromatic matcha shines in this incredibly low sugar chocolate. Simply sublime.

Our fine cacaos have incredible purity and depth of flavour. Each one is quite unique.
For the finest flavours we take about 3 weeks to make the chocolate at low temperatures.
We believe that the finest flavours come from the finest ingredients.
We buy direct from the farmers with whom we have long term partnerships.

CEREMONIAL GRADE DRINKING MATCHA

The best ingredients really do make the finest flavours.

You can imagine there are many grades of matcha from industrial, to cooking, drinking and then ceremonial grade. The first time I visited the farmers in Uji, near Kyoto I tasted all of them and fell in love with this ceremonial grade Kotobuki matcha. It is made from the first harvest's youngest finest leaves with the softest sweetest flavours, ground into an ultra fine powder with a traditional stone mill.

The growers could not believe I was going to add it to chocolate, but when I sent them some bars made with an incredibly low sugar version of our white chocolate, they were delighted.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

This is a high quality white chocolate enhanced with Kotobuki Matcha green tea. The green tea flavour is clear, but doesn't overpower the white chocolate flavours. It's smooth, creamy, and very satisfying.

Man alive it's the most exquisite chocolate I have ever tasted.

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products. We recommend checking the full ingredients list and allergen declarations before purchasing, particularly if you have a food allergy or intolerance.
