What goes in this bar?

A MATCH MADE IN HEAVEN

Orange and dark chocolate, a combination as old as time and for good reason. Here, I have levelled this classic up a notch. Using cacao with natural honey notes, the orange really comes alive and there is a complete sense of harmony.

Making chocolate bean to bar is all about creating balance. Too much sugar hides flavour, too little does not bring it out. Here the key is the pairing of the cacao with the orange.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

In general I'm a big fan of Willie's Cacao, I find it rich and delicious and that goes for this dark orange chocolate too. The orange flavour is lovely and makes this very moreish for a dark chocolate. I also used it to make chocolate orange mousse a couple of times which was lovely.

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products. We recommend checking the full ingredients list and allergen declarations before purchasing, particularly if you have a food allergy or intolerance. If you need further information about a specific product or potential cross-contamination, please contact our customer service team before ordering.

All of my products are gluten and soya free. Willie’s Cacao offers a range of chocolate with different ingredients, so we recommend checking the individual product descriptions and ingredient lists to find options suitable for dietary restrictions such as vegetarian or vegan diets.
