The Story Of This Chocolate

Crafted bean to bar in my Herefordshire Chocolate Factory, this exotic square of chocolate hits you with the gentle heat of ginger and follows with a tang of lime, leaving simply delectable chocolate.

A sign that you are eating fine craft chocolate is that it doesn't contain lecithin which is an industrial processing agent. Who would want to muddy these beautiful layers of flavour.

Our fine cacaos have incredible purity and depth of flavour. Each one is quite unique.
For the finest flavours we take about 3 weeks to make the chocolate at low temperatures.
We believe that the finest flavours come from the finest ingredients.
We buy direct from the farmers with whom we have long term partnerships.

What goes into this bar?

Layers of flavour

One of the things to love about bean to bar chocolate made from fine cacaos is that each square takes you on a journey of flavour.

Here the first thing you notice is the heat of the ginger, then moments later in comes the complementary tang of the lime. Both of these flavours are quite distinct. Finally you return to the taste of the chocolate itself and that is what you will always be left with.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

It's sublime. What a perky little bar for summer, 70% cocoa with delicious little nibbles of crystallised ginger and lime. Slightly mad to think of chocolate as refreshing, but this is.

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products. We recommend checking the full ingredients list and allergen declarations before purchasing, particularly if you have a food allergy or intolerance. If you need further information about a specific product or potential cross-contamination, please contact our customer service team before ordering.

All of my products are gluten and soya free. Willie’s Cacao offers a range of chocolate with different ingredients, so we recommend checking the individual product descriptions and ingredient lists to find options suitable for dietary restrictions such as vegetarian or vegan diets.
