The Story Of This Chocolate

This Javan Dark Breaking bean stopped me in my tracks. It’s an adventure in taste, with its rich caramel and toffee flavours born in the volcanic soils of Surabaya.

It is to capture the beautiful flavours of the world's great cacaos, that I make all my chocolate from bean to bar. That way I can get the perfect roast, and conche slowly and gently to remove any unwanted acidity while protecting the fine flavours. It is all about fine flavours and perfect balance.

Our fine cacaos have incredible purity and depth of flavour. Each one is quite unique.
For the finest flavours we take about 3 weeks to make the chocolate at low temperatures.
We believe that the finest flavours come from the finest ingredients.
We buy direct from the farmers with whom we have long term partnerships.

Where does this bar come from?

Surabaya, Indonesia

This beautiful chocolate is made from the Javan Dark Breaking Bean.

They are grown in the volcanic soils of Surabaya on Java in Indonesia, towered over by the fearsomely beautiful and still active Mount Bromo.

They are the marmite of my beans. Love them or hate them with their deep, sophisticated, caramel toffee notes.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

Just try it! It’s totally natural and when they say you can taste the caramel notes you really can! No lecithin in it which is probably why I like it. Love the Rio Caribe and Chulucanas ones too!!

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products. We recommend checking the full ingredients list and allergen declarations before purchasing, particularly if you have a food allergy or intolerance. If you need further information about a specific product or potential cross-contamination, please contact our customer service team before ordering.

All of my products are gluten and soya free. Willie’s Cacao offers a range of chocolate with different ingredients, so we recommend checking the individual product descriptions and ingredient lists to find options suitable for dietary restrictions such as vegetarian or vegan diets.
