The Story Of This Chocolate

This beautiful dark chocolate gets its softly floral fruit notes from the fine beans in the San Vicente district in Colombia. They have such a gentle character that they make the perfect 95% dark chocolate.

I craft make my chocolate from bean to bar to capture the stunningly individual flavours of the world’s great cacaos. Everything is made in small batches which takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours. The chocolate is 100% natural, containing simply cacao, raw cane sugar and natural cocoa butter - no vanilla or soya lecithin to hide the beautiful flavour notes of the beans.

Only Natural Ingredients

Our fine cacaos have incredible purity and depth of flavour. Each one is quite unique.
For the finest flavours we take about 3 weeks to make the chocolate at low temperatures.
We believe that the finest flavours come from the finest ingredients.
We buy direct from the farmers with whom we have long term partnerships.

Where does this bar come from?

Colombia, South America

Colombian cacao benefits from fertile soils, consistent rainfall,
and careful cultivation practices. Small holder farmers like the ones at San Vicente use traditional and sustainable farming methods, growing cacao under shade trees.

In recent years, Colombia’s cacao industry has gained
international recognition, not only for its premium quality but
also for its role in supporting rural development and offering an
alternative to illicit crops, making it both an economically and
socially significant agricultural product.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products. We recommend checking the full ingredients list and allergen declarations before purchasing, particularly if you have a food allergy or intolerance.
