The Story Of This Chocolate

I discovered the beautiful Trinitario beans for my San Agustin 88% dark chocolate in the ancient San Agustin District, in the foothills of the Colombian Massifs. Go with them on a journey of flavour, their soft notes of cherries and damsons dancing through the depths. With 88% cacao, this is a delicious low sugar chocolate.

I craft make my chocolate in small batches from bean to bar, to capture the mind-blowingly different flavours of the world’s great, single estate cacaos. This takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours. The ingredients are simply cacao, raw cane sugar and natural cocoa butter, I never use vanilla or soya lecithin as these would hide the beautiful flavour notes of the beans.

Our fine cacaos have incredible purity and depth of flavour. Each one is quite unique.
For the finest flavours we take about 3 weeks to make the chocolate at low temperatures.
We believe that the finest flavours come from the finest ingredients.
We buy direct from the farmers with whom we have long term partnerships.

Where does this bar come from?

San Augustin, Colombia

These beautiful Trinitario beans come from the ancient San Agustin district in the foothills of the Colombian Massifs.

Farming methods are traditional, and no chemicals are used. What I find fascinating is that when you add different amounts of sugar to it, it reveals different flavour notes.

In this 88% dark chocolate you catch the soft notes of cherries and damsons. In the 70% you catch glimpses of red fruits but what strikes me more are the honey nutty notes.

Tasting tips

Close your eyes, let the chocolate melt and for a few minutes of pure pleasure let yourself be transported to the places where the cacao was born. Tasting single estate chocolates is like tasting fine wines. You’ll go on a journey of flavour as you discover their immense depth and complexity.

Prepare

Prepare

Get your chocolate to room temperature as cocoa butter melts at body temperature and below this the flavours will not shine. Have a glass of water ready, to drink between chocolates.
Break and smell

Break and smell

The snap as you break it will tell you your chocolate has been well made. Catch the aromas, 90% of the taste is perceived by the nose.
Try not to bite

Try not to bite

Melt a small square in the centre of your tongue. You’ll notice that the flavours evolve as the chocolate melts, and every bean is different.
Notice the texture

Notice the texture

By adding less cocoa butter than most chocolate makers, my chocolate does not melt so fast but the flavour stays with you long after you have eaten it.

Frequently asked questions

For the best flavour and texture, store your Willie’s Cacao chocolate in a cool, dry place away from direct sunlight, ideally between 15–18°C. Keep it away from strong-smelling foods, as chocolate can absorb surrounding aromas. Avoid storing chocolate in the fridge, as moisture and temperature changes can affect its texture and appearance, sometimes causing a white bloom on the surface. If your kitchen is particularly warm, refrigerate chocolate in an airtight container and allow it to return to room temperature before opening. Properly stored chocolate will retain its delicious flavour and quality for longer.

Allergen information can be found on individual product pages and on the packaging of Willie’s Cacao products.
